Recipe: Berry Chia Seed Pudding

This Berry Chia Seed Pudding is a delicious, sugar-free desert that your entire family will be sure to love! 

Ingredients:

  • 2 cups organic blueberries, raspberries, or blackberries, divided
  • ¾ cup full-fat coconut milk
  • ¼ teaspoon sea salt
  • ½ teaspoon real vanilla extract
  • ½ teaspoon cinnamon
  • ½ cup chia seeds
  • ½ cup dried coconut flakes (unsweetened)
  • 2 tablespoons hemp seeds
  • ¼ cup raw walnuts, finely chopped

Instructions:

  1. In a blender, puree 1 cup of berries with coconut milk until smooth.

  2. Pour the berry mixture into the bowl. Add salt, vanilla, cinnamon and chia seeds. Stir to combine.

  3. Seal in an airtight container in the refrigerator for 12 hours or overnight. This mixture will become thicker and pudding-like.

  4. When the mixture is ready, stir it. Divide it into four small bowls and top with coconut, hemp seeds, walnuts, and remaining berries. Serve chilled.
